Instructions & Ingredients
In India, the samosa has evolved into a popular snack with a variety of filling to suit the local tastes and ingredients. The most popular filling is spiced potatoes and peas, but the versatility of the samosa has led to many creative fillings and adaptations reflecting the diverse nature of Indian cuisine.
YOU WILL NEED: 2 Large or 3 Medium potatoes, Salt, vegetable oil, water, green peas. Oil for cooking.
STEP 1: Peel and boil 2 large or 3 medium potatoes until soft (about 20 minutes).
STEP 2: Make dough. Mix 2 c. plain flour, 1/2 tbsp. salt, 1 tbsp. vegetable oil, and 1/2 c. water. Mix thoroughly to form a dough. Rest for 20 minutes.
STEP 3: Smash cooked potatoes with masher and add 5 tsp. SAMOSA SPICE MIX with 1/4 c. frozen green peas.
STEP 4: Divide dough into 4 pieces. Roll each piece into 1/8'' thick ovals. Cut in half width-wise. Moisten straight edge with water, fold and seal to create a cone/pocket. Fill cone with potato mix, moisten open edge with water and seal with fingertips. Cook in hot oil, turning to cook all sides. Serve with chutney of your choice and ENJOY!
